Andrew, more often known as ‘Noddy’ loves his cooking, particularly when entertaining guests at his family’s Surrey home. ‘Low and slow’ BBQ cooking started as a hobby and became a passion. ‘Pitmasters’ will rarely share the details of their favourite combinations of rubs, meat cuts and smoking wood and Noddy is no different. It is these three ingredients that come together to create gobsmackingly delicious, melt in the mouth, pulled pork, ribs, brisket and chicken. Oh, and you need a lot of patience and a few beers on hand while you’re waiting of course. Then. once you’ve tasted it, you cant help coming back for more…
Noddy first experienced real southern pit BBQ while on rugby tour in Texas as a teenager. He fell in love with those roadside BBQ joints, sometimes in the middle of nowhere, serving amazing ribs, slaw and mac ‘n’ cheese..the holy trinity. Twenty years later and a few years living in the US and Noddy purchased his first offset smoker from Yoder in Kansas. He shipped it home when he returned to the UK and has been smoking for friends and family ever since. He is always researching new ideas, recipes and techniques and, when travelling anywhere in the US, will try out the best smokehouses in town so he can bring new tastes back for you.
